Almost every price question on this coast turns out to be a question about where you get on the boat. So here is the map.
From Bari itself, the boats show you the city from the water — the old town, the Lungomare, the fishing harbour — usually ninety minutes with a drink on deck. They start from €40 (about $46).
The sea caves everyone photographs are somewhere else. They are at Polignano a Mare, half an hour down the coast on a regional train. Those trips run about the same ninety minutes and start from €29 (about $33) — less than anything leaving Bari. Monopoli, a few minutes further along the same line, reaches the same caves from the other side and is the one town here that sells a half-hour trip.
Above all of that sit the longer boats, the sailing catamarans and the private hulls you book by the whole boat, which start from €255 (about $295).
So the first thing to settle is which town you sail from. The second is that once you are at Polignano, the cheap boats and the slightly less cheap ones are close to identical — which is why the same short list keeps winning below.
Those two things — that the caves are at Polignano, and that everything between €29 and €40 (about $33 and $46) is the same trip — point at one short list. Everything further down this page is the evidence for it.

The Polignano sea caves tour with snorkelling and aperitif is the boat we would put four friends on. It sits two euros above the cheapest credible trip, in the band where nothing else changes — and it is the one that spends those two euros on things you will notice. Its listing is the only one on this coast that publishes the lot: snorkelling equipment, a freshwater shower, a toilet on board, a sunshade, prosecco and soft drinks, a professional skipper and a local guide, in a small group.
The review base does the rest of the work. Nearly five hundred people have been, and they average 4.8. That is more than enough to know what you are getting, and it costs five euros less than the boats whose only advantage is a bigger number of reviews.
Book this if you want the caves, a swim and a drink, and you would
rather not spend the afternoon wondering whether the cheaper boat had a toilet.

Polignano — the boat leaves from the marina there and you make your own way to it.

The speedboat cruise to the caves is the most-booked boat on this coast by a wide margin, and it still averages 4.8. The trade is real though: its listing offers a driver and an audio guide where the cheaper boats give you a live one. You are paying for the weight of evidence; the afternoon is the same.
Book this if you hate booking blind and want thousands of people to
have gone first.

The Polignano catamaran is the first price on this coast that changes the afternoon itself, and does not simply put a better-reviewed crew on the same trip. A sailing catamaran, half an hour longer, two paddleboards, and an Apulian spread — focaccia, friselle, mozzarella, cold cuts, fruit — with prosecco, wine and beer rather than one drink.
Book this if you want the boat to be the day, not the errand.

The Polignano private tour to the caves is the cheapest private cave boat with a review base worth the name. Split ten ways it is about €31 (about $35) a head, which undercuts every shared seat; split two ways it is about €154 (about $178) each, which does not. Note that drinks, food and marina taxes are excluded — almost every shared boat includes a drink and this one does not.
Book this if there are eight or more of you, or the privacy matters
more than the price.

Three towns on one stretch of coast, all on the same regional line out of Bari Centrale.
Bari is where you sleep and where the airport is, and its boats sell the city: ninety minutes to two hours past the Basilica of San Nicola, the old walls and the Lungomare, with an aperitivo on deck. They start from €40 (about $46) and they do not go to the caves.
Polignano a Mare, 31 minutes down the line and €6 (about $7) return, is where the cliffs are. This is the biggest choice on the coast and the cheapest, starting from €29 (about $33), and you walk from the station to the harbour. If you came to Puglia for that photograph, this is the town.
Monopoli is a few minutes further, €8 (about $9) return from Bari, and it is the only place here that sells a short trip — the half-hour gozzo tour along the Monopoli coast runs from €10 (about $11), rated 4.8 ★ · 71 reviews. Its longer boats sail to the same Polignano caves from the other side, and several take in both towns’ coastlines on the way.
So the routing is simple. If you have an evening in Bari and no wish to travel, take a Bari boat and enjoy the city from the water. If you want the caves, the cheapest and best-supplied boats are at Polignano, and the train is the cheapest part of the day. If you have small children or half an hour to spare, Monopoli is the only town that will sell you a short one.

Up to €35 (about $40) the money buys equipment and time on the water. Between €35 and €40 (about $46) it buys reassurance. Above that it buys a different boat. One rung at a time, from Polignano, where the whole ladder exists:

Sort the Polignano boats by price and something odd happens: nearly everything in that eleven-euro spread is the same trip. Ninety minutes to two hours, the same run along the cliffs, the same caves, a stop for a swim on nearly all of them and a drink on nearly all of them. Two euros up or down does not change the boat, the route or the time on the water.
What does change, enormously, is how much anyone can tell you about the operator. Inside that band the review base runs from a single review to nearly four and a half thousand. That is the thing to decide on, and it is the reason our pick is not the cheapest boat on the list: the sea caves tour with snorkelling has hundreds of people behind it and the fullest kit list, while the gozzo tour costs exactly the same with one review and the cave tour with swimming stops is rated 4.4 ★ · 7 reviews.

Four things do not improve with the price, and knowing that saves most people money.
What genuinely varies: how long you are out, whether a live guide or just a skipper is aboard, how many people share the deck, whether snorkelling gear and a freshwater shower are provided, and whether you get an aperitivo or a meal.
Most listings exclude transport to the meeting point, so the honest price of a cave trip includes the train.
If you are sleeping in Bari, the cheapest cave boat is not really €29. Add the return fare to Polignano and the sum looks like this:
Two things fall out of that. The first is that the two cheapest towns cost exactly the same once you are travelling from Bari, despite a two-euro gap in the headline prices — Monopoli is a longer, dearer train ride. The second is that the train is a rounding error next to the boat, which is why paying a Bari operator to handle it is rarely worth it.
The cheapest boat that collects you in Bari is the boat tour to the sea caves of Polignano, from €56 (about $64) for three and a half hours including round-trip transport — about €15 (about $17) more than doing the same thing yourself, on a listing only four people have reviewed. The better-tested option is the day trip with a boat ride and free time in Polignano, from €68 (about $78), rated 4.4 ★ · 189 reviews — the weakest rating of any well-reviewed boat on this page, and about €27 (about $31) more than the train.
Our view: unless you are travelling with someone who cannot manage a station platform, take the train. Trains run through the evening, Polignano’s harbour is a ten-minute walk from the station, and the money saved is most of a second boat trip.
Private boats are priced for the whole hull, so the answer is arithmetic before it is taste.
The cheapest private cave boat with a review base worth trusting is the Polignano private tour to the caves, from €307 (about $355) for the boat, up to ten people, rated 4.9 ★ · 64 reviews. Against a shared seat at about €35 (about $40), it starts to save money at around nine passengers. Below that you are paying for the privacy, and you should know how much:
There is one genuinely surprising result in here. A family of four on the Polignano catamaran pays €356 (about $412) for four seats — more than the €307 (about $355) it costs to have the private boat entirely to themselves. The catamaran feeds you properly and the private boat excludes food, drink and marina taxes, so it is not a straight win. But if four of you are choosing between the two, the private hull is the cheaper hull.
